Nate and I have been trying to be more adventurous lately when it comes to food. We are bored of our usual "menu," so we've been trying to make something new at least once a week. Last week it was pizza- but not just any pizza. This pizza had a secret ingredient.
Tofu.
I know, it sounds pretty weird and gross, right? Don't worry- the tofu was a topping, not the main ingredient in the pizza dough. You can't even taste it, but it's good for you and gives an extra bit of protein for those of us who eat very little meat.
1 14-oz. package extra-firm tofu, drained
1 10-oz. package frozen chopped spinach, thawed and squeezed dry*
1/2 cup chopped soft sun-dried tomatoes**
1/2 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese
1/4 cup chopped fresh basil
1/2 tsp. onion powder
1/4 tsp. salt
1/4 tsp. pepper
1 lb. pizza dough***
pizza sauce, to taste
*This makes for a very spinach-y pizza. Nate loves the stuff, so we used almost the whole packahe, but next time I think I would use a little less.
**We probably didn't used a whole 1/2 cup of sun-dried tomatoes either. Also, use the ones packed in water, not oil. We used the oily ones, and I think water would have been better.
***I don't know what recipe Nate used for dough- pretty much anything works, I think.
Heat oven to 475°. Prepare cookie sheet with nonstick spray, if needed.
Crumble tofu into small bits- pat dry. Put in a large bowl and use your hands to mix together with spinach, tomatoes, cheeses, basil, onion, S&P.
Roll out dough. Spread on desired amount of pizza sauce and topping mix (we had some leftover, so don't feel like you have to pile it all on there). Bake 18-20 minutes until crust and toppings start to turn a light golden brown. Enjoy!
This pizza wasn't just really healthy- it was actually surprisingly delicious (I had my doubts), and it was SUPER filling! I could barely eat two slices. Try it!
